Some of you are probably shaking your heads and thinking, "What is this woman
talking about? How can a SALAD change anything?"
I'll tell you how.
I was rereading a blog post from myfitnesspal account (from a looong time ago) in which I mentioned that I was 35 pounds down. Well that is no longer true. I wish I could say I was 55 pounds down now but instead I'm forced to admit that I've gone the other direction. I only need to gain 4 more pounds to be at my all time high of 270 pounds.
Depressing, I know.
Perhaps the most depressing part is that this is far from the first time I've lost weight and gained it back. I'm your classic Yo-Yoer. And I hate it.
So, in search of motivation, I spent the majority of Tuesday afternoon watching weight loss transformation videos on YouTube. I was feeling empowered and ready to conquer the world but then that little negative voice reared it's ugly head and said, "Yeah, you were ready to 'conquer the world' all those other times too."
That's true. What's to say this time will be different? What made the difference for all those people in the videos I just watched?
Believe it or not, that last question was one I had the answer to. The common thread of those success stories was that they all came to the realization that losing weight, staying fit and becoming healthy was a lifelong process. They all reached a point of accepting that "diets" don't work and a lifestyle change is the only way to make it a permanent one.
So Wednesday morning, I set out to do just that - change my lifestyle. I started making lists of all sorts. Workout lists, grocery lists, eating schedules....lists ad nauseum.
My list of recipes to try came mostly from a free kindle download called the 17 Day Paleo diet. Although I had decided that I wasn't going to be militant about doing Paleo, some of the food sounded really good so I wanted to give it a shot.
Man, am I glad I did! One of the first things I tried was a Paleo Chef Salad. It's so simple that you're probably going to shake your head again.
Lettuce, green onions, tomatoes, hard boiled egg, bacon, chopped ham or turkey and avacado slices. That's it...and IT is fabulous!
Now, I'm not sure you understand the importance of this discovery. The fact that I can eat a salad without dressing is nothing short of a miracle. And I'm not just forcing it down - I'm loving every minute of it and licking my plate clean. (Some of you are thinking, of course you love it, what's not to love about avacado and bacon?! And yes, you have a point there.)
Today, Friday, as I went home to make another chef salad, I realized something. With healthy food that tastes this good, a lifelong change might just be possible.
I haven't felt this kind of hope in a long time...and all because of a silly salad!
